Tucked into the East Village is a cocktail bar unlike any other and there
isn’t a drop of alcohol in sight.

No More Cafe opened to prove a point.
Non-alcoholic drinks don’t have to be compromises. They can be crafted,
intentional, and unforgettable. What started as a bar became a bottled line
only because our guests kept asking to take it home.

But we didn’t outsource the process. We didn’t scale it through a factory. We kept it in-house.

Every cocktail we bottle is developed behind
our bar. We take an unique culinary approach to non-alcoholic beverages, and we
don’t pretend to be anything else. No Extracts. No "natural flavors." No added preservatives.

Every batch is cooked, layered, pasteurized, and
labeled by hand. This is structure, texture, and depth.

What are mocktails, and is No More a mocktail?

Technically yes — No More is a non-alcoholic cocktail. But we stay away
from the word “mocktail.”

Mocktails are often sugary imitations — something you'd give a child to mimic a
grown-up drink. That’s not what we do. Our cocktails are built from real
ingredients, structured like a dish, and designed for an adult palate. No
faking. No pretending.

Are non-alcoholic cocktails supposed to taste like real cocktails?

Not really. A drink isn’t good because it has alcohol — it’s good because
of balance, texture, and intention.

Trying to recreate whiskey without alcohol is like trying to make steak out of
tofu. It might remind you of something, but it’s never going to be the real
thing. Our goal is to recreate the experience of drinking — not mimic a
specific spirit.

What is a zero-proof drink?

A zero-proof drink is 100% alcohol-free — not even trace amounts.

No More cocktails are 0.0% ABV. No fermentation. No distillation. Nothing added
or removed. Just structure and flavor from real ingredients.

What makes a good non-alcoholic cocktail?

Balance, structure, and weight.

If you can chug it like a soda, it’s probably not a cocktail. A good zero-proof
drink should have presence — it should slow you down and feel intentional. The
best ones help you forget you’re not drinking. The worst ones remind you every
sip.

Why are some non-alcoholic drinks so expensive?

Because the cheap part of alcohol is... the alcohol.

Real ingredients, culinary methods, and small-batch production take time and
cost money. And for products that remove alcohol, there's even more labor, plus
shrinkage from evaporation. You’re paying for everything but ethanol —
flavor, structure, and process.

What are the best alcohol alternatives for adults who aren’t drinking?

It depends on your standards.

If you didn’t care what you were drinking before, you won’t start now. But if
you’re used to complex spirits or thoughtful cocktails, the best alternatives
are drinks made with intention — not just colored water with sugar. That’s why
we created No More.

Is it safe to drink non-alcoholic cocktails if I’m sober or in recovery?

Yes. Our cocktails are zero-proof and contain no alcohol at all.

That said, recovery is personal. Some guests have told us that the experience
of being in a bar or holding a stemmed glass can feel triggering. So even
though the drink is safe, the setting or vibe might not be for everyone — and
that’s okay.

How long do non-alcoholic cocktails last once opened?

Unopened, our bottles last up to a year.

Once opened, refrigerate and consume within 7 to 10 days for best flavor. Like
any fresh product, they’re best served soon after opening.

Do non-alcoholic cocktails contain sugar or artificial ingredients?

Most mocktails rely on sugar. A lot of NA brands swap in sweeteners and
artificial “natural flavors.”

At No More, we use sugar only when it serves the drink — agave, cane, molasses,
brown sugar — and only in small amounts for balance. No artificial flavors. No
extracts. No fake sweetness.
